Inaugural Dining Event ft Le Happy Chef

The inaugural popup dining event of maynila features chef Rex de Guzman (aka Le Happy Chef) who is preparing a three-course set menu featuring classic Filipino dishes with a contemporary twist.

Tocino & Pinakbet Crostini

Starter

Pork Sisig – Fried pig head terrine with sriracha mayonnaise, quail egg, pickled ginger with radish, spring onions, green chilli, lime and coriander cress

or

Ensaladang Talong (v) – Charred aubergine, aubergine puree, red onion, heirloom tomatoes, red and green pepper, crispy garlic dressed with soy vinegar dressing

Main course

Chicken Adobo sa Gata – Chicken adobo with chilli and coconut cream with kangkong (water spinach), chayote, cassava, black garlic emulsion, crispy garlic and chilli oil, served with jasmine rice

or

Laing (v) – Taro leaves stewed in a spicy coconut sauce served with taro fondant, tofu, saru crisps, spring onion and chilli oil, served with jasmine rice

Dessert

Leche Flan – Set caramel custard and turon (plantain spring roll) with calamansi (Philippine lime) and lime sorbet
